What is Canning?

Canning is a food preservation process that uses heat to destroy harmful microorganisms and create an airtight seal that helps keep food fresh for extended periods. Different Foods require different methods bassed on acidity levels and ingredients. Choosing the correct canning technique helps maintain food qualtiy while reducing the risk of spoilage.

Pressure Canning

Pressure canning is required for low-acid foods because these foods need higher temperature than boiling water can achieve. Pressure canning uses pressurized steam to reach temperatures high enough to destroy harmful bacteria and spores.

Foods Commonly Preserved with Pressure Canning

  • Vegetables
  • Meats
  • Poultry
  • Seafood
  • Soups
  • Broths
  • Beans

Benefits of Pressure Canning

  • Safely preserves low-acid foods
  • Allows long-term storage
  • Supports a wider range of foods
  • Maintains nutritional value

Water Bath Canning

Water bath canning is commonly used for high-acid foods. During this process, jars are submerged in boiling water for a specified amount of time.  Because of high-acid foods naturally inhibit dangerous bacterial growth, boiling temperatures are generally sufficient for preservation.

Foods Commonly Preserved with Pressure Canning

  • Fruit Preserves & Jams
  • Jellies
  • Pickles
  • Tomatoes with added acid
  • Fruit sauces
